Tortilla recipe

Tortilla is a Spanish omelette cooked with potato and onion as its basic ingredients but peppers are a common and welcome addition. Tortillas can be eated hot or cold and when cut up make a perfect tapas which can be prepared and cooked in advance if served cold. Serve with a selection of tapas dishes such as marinated olives, spicy potatoes and chorizo bites.
