Chorizo Bites are quick and easy to make. They can be prepared in advance and popped into the oven just before or during your party. These delicious tapas snacks could be served with tortilla and spicy potatoes.
1 roll of ready made puff pastry (225g)
100g chorizo sausage, chopped
50g grated cheese (cheddar, gruyere, cantal are all suitable)
1 tsp paprika
Cut out around 16 rounds of pastry using a pastry cutter.
Chop the chorizo and mix with the grated cheese.
Put a little of the cheese and chorizo mix into the centre of each pastry round.
Fold the pastry over the cheese and chorizo mix and pinch the edges together.
Put onto a greased baking tray and glaze with the milk and sprinkle with paprika.
Cook in a pre-heated oven, 220°C/450°F/gas 7 for about 10 minutes.
Remove from the oven, sprinkle with a little more paprika and serve the chorizo bites warm.
